I have had no issues and I stay in first person all the time. I would agree that for navigating in some situations is easier in third person.
Generally, they are primarily cosmetic. It is always faster to travel by jet pack and retain all the options to scan, shoot, and mine on demand. Some players love them...but then some players can't imagine not playing in third person. They really get a kick out of the look of their stuff.
The hovering critters- only hover. None of them get really high off the ground in my experience. A few like the worm can get reasonably high in the air.

So far, the fastest companion for travelling i've found aren't flyers at all (they're actually really slow), but the 4 legged robot quadrapeds. The ones that have either balls or disks on their backs.
The go insanely fast, and can go up 100% inclines (and down), and clip through other terrain. I'm breeding one I plan to make the size of a star wars AT-AT when it's finished with gene tweaking.
I never mess with companions usually because they are so awkward and require maintenance, etc. Just seems like a lot of trouble to go through for something that isn't really going to help you all that much.
I think you need the beetle, butterfly, or flying fart fish for that. I'm not sure the hovering creatures will work.
Maybe they can fly themselves, but can't carry a person riding on them. Too much weight.
