So how do I switch galaxy's again?
I've been in Eissantam for about 4 years now.. Figured.. It's time to go to a new galaxy.

Got to the center of the galaxy, I'm literally on the edge.. there are no more stars to the center... I've entered like 3 wormholes here... still keep jumping to other stars on the very brim of the center..

Every where I see online it says "to move to a new glaxy reach the center"... I can't be any closer to the center than I already am..

First a couple of recommendations. Use a second ship without technology installed in the General slots. These will break once you're through. Also, have a second multitool to switch to for the same reason. You don't want to have to repair everything. Any technology installed in the general slots of your exosuit will also break.

Follow the line to the "gateway system". Be aware it can take several minutes for the load screen for the next galaxy to finish. If you have it active, at some point it will re-orient your ship. And you go. Some seem harder to lock on then others...not sure why... but it is essentially a waiting game.
