Living ships cannot have slots added currently, so they are inferior to fully-upgraded regular ships for most if not all purposes, but they do look cool.
I believe that everything else is purely aesthetic.

The main difference being that exotic ships are hilariously rare (I got super-lucky and got one early, this is my first NMS playthrough) and it costs like 200 million space bucks to fully unlock an Exotic ship's slots, whereas the Living Ship comes with them all unlocked. Or again, so I've read.
Overall I'd say Living Ships and and Exotic ships are fairly comparable. Unless you care about having tons of cargo slots, they're probably the best all-round ships in the game.
