It would be really nice if they added physics mechanics... but I think NMS is not heading in that direction nor was the intention to be a space sim.
But yeah I agree with you, alotugh that is outside of the controls and more of a "engine physics programming" thing.
1) I had to bump the mouse sensitivity way up to avoid long mouse drags to control the ship.
2) You need to keep your eye on the HUD to see how much turn, or where your future nose will be pointed. The HUD is difficult to see in some lighting conditions. I don't know if there is a way to change the HUD color scheme.
I'll stick to my Steam Conroller for flying my Starships TYVM.

NO, and doesnt need it, ED use newtonian physcis if you disable the flight assist otherwise with FA on you fly normaly
I'm just glad that I've not encountered any opponents in interplanetary space; I'd be completely unable to target them.
I've found myself shouting at the ship's behaviour; I'm going to stop playing for a while and see if this gets sorted out in the next patch. I'd like to like the game, but it's fighting me all the way.
