*Unless you're just referring to copper, gold, and the like. Which you can fly around and eyeball it, you can usually tell what it is by its colour.
But as people have answered, you have to go down to a planet to mine in the first place.. you can do a couple different things if your scans from space turn up empty results.. After you've finished scanning the planets/moons and found the one with the desired resource deposits, fly down to that planet and you can fly around while you visually look for the deposits... They're usually reflective and unnatural enough to stand out in the planet's biome, but if you still need further help finding one, find a nice plutonium shard sticking out of the ground and land next to it.. build your signal booster to find the resource deposit and then mine that plutonium to pay for the launch costs..
To execute this sprint, melee then quickly press and hold your jetpack, once you master it, it makes getting around much easier and breaks the tedium
You can even fly around the buildings using this method without landing, and leap over huge chasms in the enviroment

Once you get the jetpack upgrades you can do it much better than this guy, but you get the idea
