Is there some specific part or location in the game where the crashes occur?
Have you checked / disabled your background programs, especially Windows Update that should not be running when playing?
No specific part. I'm now able to make it last longer without crashing by setting the texture quality to Standard. Maximum VRAM usage the game got to was 7.5GB (out of 11GB total, 3GB still free).
Windows Update isn't running (I've got it disabled).
I have a 1080sc with 8gb, i7 4770s and 16gb ram. I only have a 60hz display running 1080p.
The graphics are capped at 60fps in hardware not the game.
I have no issues at all with crashing.
I had once a "bugged" planet that made me crash often.
Next system, new planet and it was gone.
Verify steams NMS game files just in case.
Ensure the video drivers are not corrupt, and overwrite if able?
If running windows then run SFC /scannow
If no problems found for any of the above then Uninstall GeForce Experience
Also check your computer's memory, run MemTest86+ from USB stick & let it run ~ 24hrs
If memory gives some errors try reinserting memory, check timings, etc.

Already verified the game files.
I've ran DDU and reinstalled the latest Nvidia drivers (I've also tried downgrading a couple of generations).
Already ran "sfc /scannow". This is something I do every month anyway.
I'll give memtest a go and leave it running over night. Oddly enough this is something I actually use quite frequently on "test" systems since I actually deal with a lot of second hand memory.
I'll post an update tomorrow with the memtest results.
On an extra note: It seems to be taking anywhere from 30-60 minutes to crash now. So there's some progress, but still not perfect.
So I'm at an absolute loss here, no idea what to do at all.
Edit: Maybe also check/update or reinstall soundcard drivers? (esp. if Creative Labs)
