How do you identify copper from the ship?
I'm on the tutorial and there are no copper nodes near me. How can I find some while flying the ship?

Copper is yellow-ish, so try to land near yellow-ish deposits. I'm not sure if the ship's scanner can also tell you what it is.

You can’t positivity ID from the ship. As Orion said, look for right color.

It is possible to find copper from your ship, but you must fly incredibly slow and low over the terrain, firing at the deposit, it won't mine, but it will pop up what it is, briefly. Your best bet is to land, and use your visor to scan the surrounding area, marking the deposit, then flying to it (or walking to it if its close enough to your location and launch fuel is an issue for you).

Run in a direction for a couple of 100 meters and use your visor to scan the area. Most planets they aren't that far apart. Don't be scared to leave your ship.
I do a lot of my exploring and gathering by lining up the structures and main material (gamma root, frost crystals) and running in a straight line and constantly visor scan. The buildings are all set on a plane so you can run in one direction and get to them in a row. Along the way you will come across many pools of minerals. This also is the case when flying, line up the resource and buildings and fly straight, all buildings are along that line.
I don't even worry where my ship is because you can summon it through the menu. If its a stormy planet I keep an eye out for caves I can replenish my life support in and shelter (mine a cr4pload of cobolt while there to turn to ionised and sell for heaps). And when you hit outposts you summon it to the pad and can continue after dumping your exo into ship inventory.
I find jumping out of a ship, looting anything in eyesight of the ship, then flying a bit further and repeating tedious and you miss a lot more than you think you do.
