it has story. and planets with no setinels. Rare resources are often guarded by something... in almost every game i ever played
Just don't gather resources when they're nearby. Wait for them to leave, or leave yourself and find a different area. Planets are huge, and there are a huge number of planets. No reason to keep mining in a small area.
Normally they don't bother you unless you've been gathering too much in a small area. (Although certain specific resources always grab their attention.)
They can also be more aggressive on some planets than others. Check your scanner.
But also whether or not sentinels are going to show up depends on the sentinel activity level on that specific planet and for rare resouces.
I have a planet with a massive amount of sodium flowers concentrated in one location, but the area is also riddles with glowing orbs that the sentinels protect like bees to a hive, but even then I can easily move around collecting them and keeping ahead of the sentinels, causing them to lose agro rather quickly.
They also can't find you inside buildings. I once had one actually follow me inside the building, look straight at me, but it was scripted to not be able to see me. :)
The only reason they would aggro you for harvesting carbon is if you continue to do it in front of them while they are scanning you. FFS move away from them a bit and harvest carbon somewhere else. They are not that hard to work around.
