Is there a reason to leave the starting galaxy?
I feel like im stuck in the starting galaxy and im wondering if theres a downside to just staying here?

No, except for the thrill and surprise to do it the first time after travelling to the center.
If you leave the galaxy by the storyline, then the answer is: Yes, there is a difference.

Just do it, if you don't see the difference - which is very likely - then there are many spoiler posts to get you precise info, or read the game wiki.

honestly, i'm of the opinion that yes, it is worth to switch galaxies. i pre ordered the game but have barely over 600 hours in the game and for the first 550 i stayed put in euclid because logically it's not going to be very different between galaxies. i was happy to stay until one fateful day the nexus spat me out in unfamiliar space next to a players base and i naturally started exploring, the galaxy is named elkupalos and the differences have been pretty dramatic so far, first of all it's easier to find planets with blissful weather, whereas before in Euclid i found one here and there now i'm finding them every 3rd jump or so, i've also found 2 experimental and 1 alien multitool which is way way more than i've found in months of travel. the ships seem to have more vibrant paintjobs and some i've actually had to stop and take pictures of.

the downside here seems that the S class modules are not as abundant, in euclid i'd find some vendors carrying up to 6 S class modules while here at most i've seen them carry 3 if i'm lucky. there are probably a few more downsides but nothing that really stands out.

keep in mind i travel to explore and unless i'm bored i'll explore and document every planet in the systems i land so i don't cycle through so many stations, nas a result i might not be getting as full a picture as i'd like but so far besides my bases i've had no real reason to go back to euclid.

The other galaxies have slightly different properties, like changed probabilities of RBG stars, weather, abandoned systems. But mostly, there isn't much difference between them.

The Devs have continued to add divertisments to the game so you never really have to explore if you just want to hang out at a base all the time.

I would recommend exploring the unknown. Bonus: you can come back if you change your mind now.

Prior to HG adding the ability to traverse to new galaxies and still be able to come back AND keep bases in multiple Galaxies, there really was little argument to be made for switching Galaxies if you were really into base building and did NOT want to have to re-build.

With the ability to have bases in multiple Galaxies, and how easy it is to go back and forth now, I'd agree with the above if you are into exploration, but also like building.

Plus with the OLD way of switching Galaxies via the Center, it meant having to repair every single piece of tech in your ship AND your exo-suit.

Now, you can just call in the Anomaly and use the Portal without having to do all those repairs.
Exploring multiple galaxies is now officially on my bucket list :)

AFAIK, jumping to other galaxies via the center will have the reverse limitation that you will spawn within 3000-4000 LY around the center of the next galaxy and unable to use a black hole to get further away, if you use a BH you will still spawn at 3000-4000 LY around center. Once you know this, then other galaxies are rather useless forcing you to warp big distances to explore, but this time from the center to the outside.
Maybe they have changed or fixed this mechanic in the current version but I doubt.

About a month ago I finally left Euclid by going through the center and I spawned about 700k LY away from the center of the new galaxy.

I think this was a short-term bug that coincided with the all-galaxies-lead-to-Euclid bug.

I'd say the bug is half fixed. About 50% I end up at 700 K from the center, the other 50% I come out at 3-4000 LY from the center.
