Also, I've found planets with connected cave tunnels (Got lost in one once, eventually tunneled my way out), and planets with really huge caverns (Was tempted to build a base in those huge caves).
On the other hand, the vegetation & deposits are dull and monotonous in caves, I give you that.
Well, you have me there. I only play since a bit before the Abyss update, so I have no knowledge of the time before that.

Just don't build it underground as you might come back and find it filled in.
I have seen plenty giant caves, the have things inside yesterday I saw a flying creature inside. And certainly caves in which you can get lost.
Some planets don't even have caves but mere holes as you say, but not every planet is the same.
No problem (in my experience) with the depth of caves it really depends on the plant.
2. Not many caves with creatures like you said, and when I do see them It's just one kind.
3. Not Boring, I love cave exploring and have seen a crazy variety. I build most of my bases deep in caves so I'm always looking for the unusual, underwater or above.
4. Connected tunnels, you bet. Some caves I have found are so long I have 4 and 5 bases
beside each other in the same tunnel so I don't get lost. I can teleport from one side of the tunnel to the other.
So keep exploring, it's part of the fun of the game, sometimes surface boring planets have great caves. The underwater caves have the most variety, it used to be the opposite.
In the current version of the game the planet isn't uniform all the way around. Moving to a different part of the planet reveals different features and fauna if you are looking for that last animal.
