Had something similar happen with a fighter, it had the perfect look and painting I was looking for, but I couldnt find better than A class for it either.

Note the spawn rate of freighters depends on race of the system but spawning of S Class is dependant on system economy. In a poor system they could be extremely rare indeed.
You either have to get lucky or save scum for it.
If you want to save scum for it: Make sure the system is intermediate or rich, go to a trading outpost on a planet (NOT the Space Station, fewer ships turn up), make sure your own ship is not on one of the pads (land as close as possible and walk the rest) this frees up one extra pad for NPC ships to land on.
Stand around on the outpost (I usually jetpack on top) and watch the first wave of ships, scan them when they land to find out what they are, if yours does not turn up or it is not 'S-Class', reload the autosave. Rinse and repeat.
Just be aware that it could take many hours to turn up, but it WILL turn up eventually.

Make sure the Economy scanner is installed on your ship too. The Galaxy map will allow you to easily check what type a system is.
thats not without saying that these ships and class can and will spawn in lower wealth. its called RNG. like your playing a dice rolling game.
If any of you like playing against Fate i would recommend sticking to high wealth only lol your hair will thank you.

So they can only spawn as a 48-8 S class with any other type of wings but those two? Unfortunate.
Edit: Oh, I see, it has the wrong hull type. *Doh!* In the meantime, I was able to get it to spawn S-class, but without perfect stats:

I am not sure 48 slot ball/pod haulers with large shields/wings exist. The most common one is the "mini shield" design, see link below:

This is because even with no upgrades, most pirate or ship battles are easily won because, if you haven't noticed, you can recharge your ship's shields manually during battles. Indefinitely. That means your damage isn't really important since even with the most basic ship you are essentially invulnerable if you have enough sodium to keep recharging your shields. NPC ships on the other hand don't recharge their shields during battle. That means the Damage and Shields specs are essentially useless fluff.
The only important spec is "Hyperdrive" range. Instead of 100 ly hops, you can, with full engine upgrades plus S-class "Hyperdrive" buff, go 3000+ ly in one go. Since each jump wastes about a minute of your life, that means by buffing up Hyperdrive you can save nearly 30 mins of your life per jump....assuming you have someplace to go in the first place.
