I get you though. I haven't bought the game for the reasons you list and having experienced the same in other similar games. Once the sine wears off you realize there's nothing there.
The game is about exploration, curiosity, imagination... This statement right here tells me it's just not the game for you. Sorry, hope you refunded it before the time ran out, but either way feel free to move on with your life.
the point of the game is that there is no point.
thats called a Sandbox.
do what you want, why you want were you want it... because you simply can do it.
nothing more, nothing less.

now do what you want... but don't ask what the point of a Sandbox is.. there is simply no point.
beside: just follow the Atlas Path and the Artemis Quest... both conclude into an answer to your Question.
MP will make it more fun because now we can explore or share discoveries and creations with each other more directly.
There is no end to the game, no final goal. Initially, we were all moving toward the center to jump to the next galaxy. Some folks decide to build a hub- so then you had a 2nd option. Some started testing other boundaries- what happens if you go to the outer edge? Can you jump out the freighter door? Do a dive to a planet? ... the list goes on.
It's a chill game experience without goals...
And you do that... look for goals, look for reasons....
It's exactly what this game is supposed to be (and what many miss totally indeed) a game you play with no real reasons...
No stress, no meta, just put some great music, fire up the game, and go wander wherever, take hours to take your best screenshot, jump in 10 minutes just to pew pew a pirate, log out.
Units are not really a goal, how to neither
Freighters and their mission are to get elements to craft advanced manufacturing elements, such as the stasis device or the fusion ignitors, until you got all BP ti craft them... IF you want to, there is no need to do so, passive incomes If you want to, but you don't need to
Story and it's lore indeed don't do it either for me, but is nice to follow and understand some lore of the game
You can mine... or not....
you can farm or not
you can pew pew or not
you can explore and advance through galaxies or not...
you can mission or not
you can manufacture or not
Aim for a better freighter or not
More frigates ? or not ?
Min max or not ?
hang around hubs or the farther away from humanity as possible
Be a ressource hog or play as minimalist as possible
It's really that... the most freedom without a goal set BY THE GAME nor the devs. The most freedom without the game scaling up to try to kill you, so you could play hundreds of hours in your starter ship... it's a goal in itself to refrain for "bigger, bigger, more bigger and please do not forget better" many games forces down your throat.
So if you need a game to hold you hand to have a goal, indeed, NMS was NOT the right game, because it never was it's intent.
The intent was to give you a big sandbox that lets you create your own stories, let you choose how to play a game you paied for.
Really ED what does it offer more ? you simply grind for better bigger ships... I played it, I loved it... I don't see more goals... unless you get crazy into that "domination" story and areas like they introduced last time I played... the game is just as empty, with the devs just implementing reasons... because peeps are unable to set their own.

Oh btw I played EvE online and went deep into manufacturing understanding, which not usually even 10% of the playing players don't even get..
It was just NOT MEANT to be that game.... it was NOT meant to be a challenging game
