What are the differences in each galaxy?
Are there any differences between them? Does everyone start in the same galaxy (Euclid) before heading to others?

Everyone start in the same galaxy. It's up to you if you ever want to move to another.

at the moment changing the galaxy at the end of the mainquest is a bad idea. the game saves no station jump portals in the new galaxy. and if you jump back to the old galaxy before you placed a base on a planet, you will not be able to return to the new galaxy. its a buggy mess atm

There are four types of galaxies:

1) Empty - This type is referred to in-game as Ancestral, Frozen, Exhausted or Silent galaxy, and displayed with a blue hologram.
The following numbered galaxies belong to this type: 7, 12, 27, 32, 47, 52, 67 etc, a total of 26. [1]
2) Harsh - This type is referred to in-game as Burning, Raging, Relentless or Ruthless galaxy, and displayed with a red hologram.
The following numbered galaxies belong to this type: 3, 15, 23, 35, 43, 55, 63 etc, a total of 26.
3) Lush - This type is referred to in-game as Halcyon, Inspiring, Serene or Tranquil galaxy, and displayed with a green hologram.
The following numbered galaxies belong to this type: 10, 19, 30, 39, 50, 59, 70 etc, a total of 25.
4) Norm - This type is referred to in-game as Imperfect, Improved, Parallel or Rebuilt galaxy, and displayed with a teal hologram.
The majority of the galaxies belong to this type, a total of 178.

When visiting a certain galaxy type, the probabilities of discovering various planet biomes are as follows.

The values in the table could be interpreted as per the following:

4 - Very high chance
3 - High chance
2 - Normal chance
1 - Low chance
0 - Zero or very low chance 1

System colours Yellow Green Blue Red

Yeah, I did some quick googling and it seems that it's been like this since a couple years ago? The more I play this game, the more I discover multiple year old bugs like these that are not being fixed by HG. That's really bad on their end

So you're basically fine tuning the difficulty level by choosing a new galaxy.
Wonder if there are many empty/harsh permadeath players out there hehe.

It is better to stay in the Euclid galaxy. It has not been completely explored yet.

Unless the whole human race buys no man sky and comit to make it their sole purpose in life, we will only know a very small %.

And that is pretty cool. If i understand corretly there something like 18 billion star systems in each galaxy.

Never say never. An update may come that makes it easier and quicker to explore systems more rapidly.

We may yet approach a time when we're trying to fill in the remaining gaps of discoveries. :)

There's 250 billion stars in the milky way galaxy. Who knows how many the Euclid galaxy has.

No, I checked it. My savegame galaxy address shows '6', the right number for Budullangr...Believe me :)
Besides, you get the galaxy name you are in immediately after warping.

No, stop lying. You changed it using an editor then. Everyone starts in Euclid.
