If you are asking from a “which one am I buying?” perspective, they are the same. If you buy “No man’s sky” you automatically get all updates, including the “No man’s sky Beyond” update.
There were a lot of rumors that if you could just align certain parts of the monolith buildings it would lead you to a special place. At that time, no one knew what would happen if you did make it to the center.
I am not sure the plain version would hold up anymore, simply because the mysteries have been solved. The landscapes and critters were incredible...in some ways better than now.

However there were some drawbacks, it was almost impossible to land where you wanted. The ship would be high up in the air flying along, and you had no way to drop down low enough to accurately land where you wanted to. You could get close, but that was it.
The missions were very short lived, leaving you quickly with one mission, to explore. The game was founded on the simple things, simply explore.
The crashed ships........ Wow, you could easily find some really cool ones. Just before I updated from foundation to pathfinder, I found a max slot red baller hauler with the glowing shield around the balls. I got the seed for that one in case I wish to change mine over, but for now its just a saved note in a folder.
There was a certain nostalgia to it though. Its really neat to go back and experience it again or to start a new save as I did. I found a baller hauler that I am working through to current. It is a shorter body, with the balls, and has 4 larger plates shielding the balls. I've been all over nms seeds sites and simply cannot find one like it. For me, I'm going to bring it up to date through the different versions of the game all the way up to beyond.
I played in the beginning but really took to the game with next. Frankly, I love all versions, but have found pathfinder to be the better early version. The terrain is close to the same as the earliest versions, but with updated graphics.
Each version has taken the game farther and farther from its roots. Its nowhere close to the original version now. In some aspects that's a good thing, but I truly feel its lost a lot in doing so. I miss the old planets and ships.
