I think Nomad is mainly intended to be used on water, and Roamer for land. Not to say you can't use Nomad on land if you want though.
A good point, however you can get your coryzagen farm up and running much faster if you gather, say, three or four stacks of the stuff before starting the farm, since each plant takes 100 coryzagen and only gives what, 20ish? So hand gathering at a planet is still a lot less painful using vehicles for populating a decent size farm to get you started.
I still prefer Temerium + Spadonium if farming for cash, but I guess one would need a lot of coryzagen if they wanted to make a pretty base with lots of glass-based decoration.

There is no right or wrong on which one you use. Pick your poisen and hopefully you do not get bit.
You can summon your exocraft to you, providing you're close enough to it.. this was designed for specifically the scenario you depicted... need to be able to get the exocraft out of a hole/cave, so the player can exit the craft, go top side, then summon the exocraft to them and continue using it outside the cave once again...
As for swimming, your jetpack refills upon submersion in water.. so if you have to traverse an expanse of water without an exocraft, try to use your jetpack to skim the surface as best as possible (the better you skim, the faster you'll fly).. when your jetpack depletes, you'll fall into the water and refill your jetpack fuel so you can go back to skimming.. and if you're skimming well enough, you won't even fall that deep into the water.. Using this trick, one can cross oceans without having to recharge all of their membranes..
