I'm having the same problem. I stopped being able to save screenshots of this game in any way. The last screenshot I was able to take was Aug 31st. I think it has something to do with the 1.35 patch.
C:\Program Files (x86)\Steam\userdata\nnnnnnnnnn\760\remote\275850\screenshots
where nnnnnnnnnn is a number that probably represents your own session or game instance ID.
No funny noises, just the popup in the lower-right corner of the screen saying that it had saved the screenshot.
Specs:
Intel i7-6700K cpu @ 4.00GHz
24 GB of memory
Win 10 X64
Nvidia GTX 970, 4096 MB GDDR5, driver 381.65
I'm running NMS in bordered windowed mode at 1768x992 resolution.
Others are correct that if taken with Steam's screenshot hotkey they should appear somewhere in the directories they referenced. Hope this helps.
In that situation, NMS creates a folder under Pictures called No Mans Sky, and saves screenshots as .bmp files. I was writing that post while away from my PC, so my details were a little off there.
However, it sounds like it's a new and different issue altogether, which would probably best be reported.

although I have two such directories with different values of mmmmmm, and the same value of nnnnnn.
Nothing is saved in My Documents, My Pictures, or Libraries. There are no nms subfolders anywhere under those headings.
The Steam screenshot uploader obviously doesn't know about them.
They were not magically uploaded to the Steam Community screenshorts area.
I don't object in principle to the integration of in-game photo mode with screenshot handling, but I do expect the in-game feature to work, or if it cannot be configured to work, to report this issue to the user instead of quietly failing.
