Can somebody explain me the temperature system ?
Looks like it's stuck on 21.11c (70f). I will try to go into the snow biome to see but never saw any other numbers or got hot / cold. I'm pretty new to the game but I know this should be a thing according to what I saw from older versions.

If you're still low level, ( I believe it's 6 and under) you should have a buff called Elemental Protection. This is normal and by design, in order to give you a chance to gear up and find/make clothing to better combat the temperatures when it does switch.
it used to work based on the clothes you wore would modify your base "heat" like wearing puffer coats anywhere outside the snow biome would overheat you since they added to your base heat and you were required to change your clothes based on the area. Now they provide just insulation now so the ambient temputure only affects you if you dont have enough insulation now thus it will stay at 70 until you enter desert or snow for the most part.

Tried on my older save in snow biome, it seems to work but it should be more punitive, why I dont get cold when it rains or in the snow with just normal clothing, why campfire doesn't heat much, why burnt forest is like vacation ? This system feels useless right now as in 45 days I never noticed it was working.
Since the change to "insulation" the temperature system isn't much of a factor anymore. My guess is that it will either be: "Removed" or "revamped" in a future alpha.

I would love to see this revamped personaly, ty for the details. I don't get why a survival mechanic like this would be removed, if they remove this whats next, remove hunger and thirst ? Advanced temperature management should be a thing in any games with survival aspects, but maybe I played too much Dayz to be objective lol.

There were times where I personally felt the temp. system was a little too harsh/overboard, but making it be almost a non-factor or even removing it entirely in the future seems a little against the grain of survival. But whatever. That seems to be sorta what they're doing anyway, where most of the "survival" is largely about the zombie factor. Doesn't bother me much either way in the long run.
I personally didn't mind the whole "change you clothes based on the environment" whole thing of the older alphas. I personally hope its revisted at some point myself and revamped.

^ At minimum I'm sure there would eventually be some mods will end up putting it back in some fashion, if not already.
We can hope that when clothing & armor is overhauled for A21, they’ll revisit weather survival since the two systems are closely integrated.
In older versions of the game I would actually die sometimes playing in the snow biome or get wet and start freezing and would sometimes actually build a makeshift frame shelter to stay in unitil the rain stopped to keep from dying.

Or the opposite where you'd spawn into miles of burning forest and you had no red tea or whichever drink it was that helped cool you off a bit and you'd be desperately trying to find shade or clothing or whatever.

...but mostly the cold. Lighting the campfire to help you stay warm. >.>
