its much more survival than 7days to die, without dungeons and such.
but in the base game - permadeath and higher difficulties
There's several overhaul mods that slow the game's progression, where the game is generally the most fun & challenging. Darkness Falls, Undead Legacy, etc. there's a bunch to try out!
I'm going to give that a shot once I'm satisfied with my Undead Legacy run. Seems interesting!
For over abundance of resources, as others have said, stuff like no loot respawn, lower loot abundance, or minimizing to no trader quests, any other self-imposed gameplay rules you can think up, etc can all help.
If combat side is more desired, outside of default difficulty options/perm death I'd probably look at mods as well - either smaller more specific ones or total overhauls. Lots swear by some of those overhauls re: challenge, survival, and more variety.
As far as other true survival games. I would suggest The Long Dark or Fallout 4 (there are a plethora of survival mods).
