I think a highend phone would work pretty well provided the go didnt work at all but in the end having to get extra hardware to make it all work with a pc hmd is hard to stay under the $200 mark now and you'd almost always be better off getting a genuine pc headset.
I say get the phone because atleast if it fails to work right its still a useful/resaleble device with a higher chance to be bought then the discontinued oculus Go.
the more I think about it, the less of an option the GO really is, as far as just using it for sim racing. Great point about it not being Steam VR - I missed that. Ultimately I'd be using Riftcat/Vridge anyow - so the only diff is probably refresh rate on the GO vs a phone. My moto G6 was acceptable - not perfect - but the only thing that really pushed me away from was the lower resolution.
I'll loo in to Offer Up and Letgo, I"m in Albuquerque, but thanks for the thought on that guy! Maybe a used VR headset is an option after all.
I accidentally came across a Rift CV1 for 175, and purchased it straight away. Only has one sensor, but I think I can use it for sim racing that way, and if not, I can source another sensor for pretty cheap. I opted for it over the phone (even though phone technically better resolution) because its OLED and slightly higher res than my phone, so the image will be a step up either way, dedicated VR, and the 6dof.

You shouldnt need more than one sensor unless you plan on spinning around backwards or turning your head super far to one side for prolonged times
