I've tried doing this with the Bigscreen Beyond VR headset and the issue is not there, even in that same game with the same view.
One thing I did notice is that the Steam VR dashboard works well and doesn't have that black area, but any application does not, including SteamVR Home and Grid
TLDR: You can use SteamLink instead of VD or Airlink and it won't capture that mesh area thing and it will work with VRView both eyes nicely. There are obvious drawbacks for giving up on VD, but it is what it is.
You can also use Oculus Mirror thing to caprture the image from the headset and send it to pc, it also works good in the sense of giving you a nice picture to stream, but it will also capture your quest guardian area and everything outside from cameras AFAIK, correct me if I'm wrong.
But eventually yeah, it's a huge bummer and turnoff that VRView both eyes is just dead for us normies using q3 or qpro via VD or just AirLink... :(
