As to a workaround, don't hold your breath, It's expecting an Nvidia-specific hardware video encoding API, which sucks because Intel's QuickSync encoder is vastly superior to both AMD and Nvidia's, AND it's fully supported in non-vr steam link.
You might try ALVR (Air light VR), an open source VR streamer. It works ok on my system (Arc A-750, with AMD Ryzen 5 5600G). It's the only reason I still have a Windows partition.
