How about Alyx?
I think this is one of the best looking PC games so far, even when compared to none vr games.
There are many more games with realistic graphics.

The upcoming Medal of Honor VR game on Steam is an AAA FPS PC VR game, so I would expect it will probably have graphics about as good as you can get.
Possibly The Wizards -Dark Times, but I haven't played it yet.
If you like eye candy, one of my favorites is Subnautica.
Alyx did have alot of object you could pick up but you couldnt let go of weapons, that next to something like blade and sorcery or even into the radius the latter two feel so much more immersive to me because I am aware of what is me in the game world and what is not me. i have influence over objects but they are only extension of me and not myself. The self and the not self.
but I guess your OP is about graphics only so Im gonna have to say half life alyx with boneworks as a close second ( only when maxed out) boneworks has a real nice consistency about its look where as Alyx is next to perfect photorealistic in some scenes.
Since I was using VAM some time before Half Life Alyx, I found HLA unfortunately very unimpressive in the realism category.
Are you trolling? They are totally not comparable, 1 is basically a character modeller/tool, the other is a game. While a bit of an exageration, you might as well compare cyperpunk 2077 to adobe photoshop..

But for real I have to echo the consensus on Alyx.
Elite Dangerous is good because it doesn't have to do a whole lot to immerse you. It's not because the game was designed lazily around that VR, it's just that the devs don't actually have to do much to immerse you because of the nature of the game. That MAY change with the odyssey expansion - once it supports VR, that is.
before you get out the pitchforks: VRChat allows for the upload of literally ANYTHING.
There's worlds so hyperrealistic with 8k textures and full PBR and you'll think you're actually there.
The avatars can also be hyperrealistic.
It's just that anime style models are common (since they avoid uncanny valley and Japanese modeler are really good at full body weight painting)
But do they have to be?
No. You can upload anything you want. Do it right and you'll even maintain great frames.
