If your headset is on and you try to launch a pancake game, it will automatically assume that you want to play the game in VR in a theater with a large screen.
Is it practical? That's another question and that can only be answered by the particular user.
You'll see references to it periodically because some games are pancake by design and have added VR support after the release. These games don't tell SteamVR that they are a VR game until after it's too late and SteamVR has already put them in theater mode. So we disable that feature for those games and SteamVR picks up on the VR part when the game loading gets to that point. EurotruckSim2 is an example.
