The Vive (if you can find one..it's now discontinued) will work with win 7 but it's a 4 year old headset and your OS that has no real VR support in it (plus a lot of VR games want Win 10) . The current headsets are much better when it comes to resolution as well .
You really need to upgrade your OS before commiting to a headset.
VR will be a problem then.
You're one random update away from it not working then.
Vive works.
Index works.
Oculus can still work, but isn't a good option.
Windows Mixed Reality is a Windows 10 feature, haven't tried the hardware so I have no idea how dependent it is on Windows 10 specific software.
VR is fairly open in general, Oculus being the biggest exception. Vive and Index will continue to work on Windows 7 for the foreseeable future. In any case, you'll still have the option to install Windows 10 at a later date if necessary.
