I'm not sure however if the "Animal Strength" is the animal's actual stength level, which means it does not increase. Or if it is a separate stat entirely.
They do increase. I started that start, put a backpack on my dog, filled it with copper put him on perma follow, and forgot he existed... At some point in my running around, he finally caught up to me one day, and had a 68~ str.
The pets stats seem to be more difficult to raise than humanoids, but they do indeed increase.

Needs to be "playing limbs" more.
1. set the character doing whatever you want to train it in.
2. Press [C] to open the stats sheet.
3. Hover the mouse over the trait in question
(un-pause!)
Wait a a few seconds and you'll see then if they're gaining XP.
Handy when you're not sure which skill is associated an operation.
This way you know instantly... Like, yes, you can train stealth and strength at the same time.
