Franks. They have the most HP and someone correct me if I'm wrong but I believe they have all the blacksmith upgrades too.

The knights of the franks have 20% more HP, but miss bloodlines. The HP bonus of the franks is essentially free bloodlines as soon as you reached castle age, and in imperial age Frankish cavaliers and paladins have more HP than any other civilisation. In the castle age though, fully upgraded knights of the Persians are the strongest because of their extra attack versus archers. I would still pick the Huns, Teutons or Persians over the Franks, because their economy bonuses are so much better than the Franks free mill upgrades.

Franks +20% HP for knights practically means free bloodlines for knights. Of course this does increase paladin HP even higher than bloodlines would.

Magyars get the blacksmith attack upgrades for infantry & cavalry for free. While this doesn't make their knights any stronger than any other civ, this surely makes getting fully upgraded knights much easier.

Persians have a team bonus for +2 attack for archers. This means Franks or Magyars with a persian teammate would make the strongest knights.

Infact, when I started playing AoE2, this was the only factor that made Franks my favourite civilization.
