If the AI has a lot of defenders; send in a distraction force to draw as many AI units away as possible. [ships or cavalry or Eagle warriers]
Don't try to hard to build a strong army. Use a transport to get your trebuchets close. DEfend only what you need to for survival.
Meanwhile keep pumping out villagers and gathering what you can; ready to make a second asttack if ytour first fails.
Early in your game build second Town Centre somewhere away from the enemy's first attacks.
In this particuliar scenario, you start baseless, needing to raid a small enemy to get villager.
You also start in the feudal age, while your enemy start in the castle one, with already constructed city and defense. It leave little time to prepare your army
As for me I capture some gaia bombard cannons, they will be a great help in the whole mission. (you can find them near some blue siege workshops on the other side of the great wall) To defeat the yellow enemy, I always build a castle with all possible upgrades near their north gate, and create mangudais inside. It will kill their army easily. After that I cover my bombard cannons with my mangudais and destroy the wonder.

If you have enough Stone, a Castle is grreat - but remember your troops heal in allied castles too. Upgrade those you have rather than making weaker troops, then heal them.
A monk kept on a transprt is generally safe from attack and can be called out to heal wounded troops. So when they get wounded quickly drop them back to the monk. Even if you only save a few it is cheaper than making new troops.
If you can make a small wooden pallisade to block the attackers from following you easily. That can give you time to heal them. The enemy will mostly have to go around the obstacle giving you tim to embark them or heal them.
