Ethiopians most certainly had Cannon Galleons and muskets, although there isn't very much evidence of them having especially powerful land cannons like their unique technology suggests. Basically, the Ethiopians siege prowess was made up but your gripes with them were not.
Malians having gunpowder is a little weird but gameplay balance is a priority over historical accuracy.
There were several Universities in the Mali Empire that attracted all types of people from all over the Muslim world to go study there. Malians kept many copies if ancient ass books, and in fact just a few months ago terrorist groups captured some of those ancient universities and burned those books.
