In the original game only siege onagers cut forest.
But to answer your question go to the Workshop and seek for "FOREST NOTHING MAP PACK". Then you get the most important Forest Prison (or Nothing) maps in one go.
Some people renamed Forest Nothing to Forest Prison, probably because it is more appealing. But the maps are usually the same.
But I don't understand one thing , with the original game and no expansions what I have to do to destroy forests ?
You start with MANGE (all have them) then in imperial age ONAGER (most have them except for HUNS and Turks) and then in imperial age SIEGE ONAGER (only some have them see above).
If you are in the lobby, you can tell if the host uses the original game and civs only or the expansions civs by the number of stars even without entering the game rooms. One for the original and three for the expansions.
And in the expansions onager (the upgrade of MANGE in imperial) cut trees. But siege onagers cut more space. And Ethiopians with their special tech from the castle cut even faster.
