Conquistador is the closest thing to uncounterable in this game but there are feasible ways to win as the Celts.
First and most effective thing to do is to rush the Spanish player. Your woodcutting advantage should trump any advantage the Spanish player has. In this case it's important to control the stone and gold resources to prevent swift castle building in the castle age. Celts have excellent rush like tower rush + Man-at-arms rush due to faster infantry or archer + skirms rush due to the woodcutting bonus.
In the castle age, it's going to be hard. Despite the crappy archery range, skirmishers remain vital and you may even want to stick to crossbows untill the imperial age, especially if you have a good amount remaining from the Feudal rush.
Other than the archery units, pikemen and monks could be considered but if the Spanish player is paying attention then using those 2 units can be very hard since the Conquistador has mobility.
Mangonels are still an option but once again it heavily depends on your opponnent micro.
And most importantly, killing a few conquistador while you lose like 10 is often worth it since Conquistador are slow to train and are expensive so replenishing the conquistadors is much harder replenishing skirms.
If you survive till the imperial age then basicly the same principles applies except crossbows should be discarded, stats-wise there isn't much difference between the normal conq and elite conq. (only 15+ hp If i remember correctly). Hopefully by then you've sofistcated siege and plenty of Halbadiers.

It was untill RotR introduced armabai. Wich are like conquistadores but better.
Somewhat arguable since archers are doing a nice job taking care of Arambais, the real problem comes with the synergy of Arambai, Mangonels and free lumber camp upgrades. I was pretty much talking about the unit on its own in which i think the conquistadors is the better all around unit.

If they do skirmish, pull out the second trash unit - the Skirmisher and just spam more than they do. You won't be outranged providing you're fully upgraded, and while lots of your units will die lots of their expensive, only-trainable-at-castle-so-really-hard-to-spam Conqs will also die.
