Knights + crossbow/scorpion/mangonel : Very standard knight rush but unlike other civs , your siege weapons can actually survive focus fire. Only use scorpions if your enemies are bunched up , Mangonels if it's a lot of ranged units. Celts do have paladins so commiting into your knights is a very feasible path but crossbows lacks many upgrades namely the arbalest and thumb ring. Scorpions on the other hand can be upgraded but might be awkward to control with your fast knights. Only go for crossbows if you have some left over archers from feudal warfare.
Woad raiders + Siege Onager (+ Hussar)(+Halbadier) : More meant to be a siege busting build so prioritize siege engineers to get the first shot of. The Celts lack bombard cannons , with that in mind if they face long ranged opponnents like the Britons and Turks then the woad raiders can close the gap quickly , Siege onagers with Furor Celtica can comfortably survive an onager shot. Hussars and Halbadiers are pretty much filler , if you swim in gold at that point you may want to go for Paladins instead but that's ill advised even with excess gold. Use halbadiers if the enemy are using cavalry or simply need some numbers going
Be aware of the Koreans though , their siege weapons outranges yours and may very well kite your siege with their Siege weapons.
In any of the above composition you may mix in rams , elite skirmishers and trebuchets.
Champions are somewhat dubious of a choice but if you're facing a Meso-American (Aztec , Mayans & Incas) civ then Champions can be wonderfull when it comes with dealing with Elite eagle warriors but those champions needs to be properly supported.
