try dayzunderground chernarus or livonia.
they offer some good mods (no trader or nostamina nonsense) and loot is very limited, specially food and ammo.

I don't know if it is still running as i stopped playing DayZ for awhile now, But TheRunningManZ non modded vanilla server was good, 1st person only and tweaks with lower loot and harder zombies. Soz if it ain't around anymore

Join a world where the Pandemic has raged for months, supplies are running low and its time to leave your hiding spaces and start TAKING BACK what was once yours.
Taking Back focuses on building communities of survivors living together in villages and towns, even cities (one day).
With only 1 safe zone guarded by a small military faction, this provides a central place where players can come together and sell their loot at the P2P market and get quests to help the Safe Zone grow.
Take over existing homes and structures with Building Fortifications (No Vanilla Building except Flag pole Kits)
Earn Renown helping AI factions, and eventually unlock more and more difficult tasks.
Form Player Factions at the cost of Renown, In Game Currency to receive special bonuses On and Offline
Be careful as your Sanity is at risk all the time. (You may even hear your subconscious mind speak to you in terrifying situations.)
Tisy, Kamensk Mil, Pavlovo, and Rify are all super dangerous but hold the best gear. So bring friends because you won't be able to stay to long in the zones.
