How to get pumpkin seeds out of pumpkin?

Was the knife ruined? As far as I know, a knife is all you need to harvest seeds from veggies.

No. They are not ruined. I tried combat knife and stone knife.

Do you even get the option to harvest the seeds when you combine the pumpkin and knife together? If no, it's either been removed or requires something else. If it does give the option, then the action is just taking it's time. You may have to cancel the action and repeat it a few times, or try hitting the 'C' button repeatedly until you're told the action has been completed.

No. If i drag the knife on the pumpkin, the color is red. But normally it should become orange.

I read a few patches ago that they were going to stop using pumpkins and pumpkin seeds. Idk if they changed there mind or they went ahead and pulled the switch on them.

Now that food is rare, pumpkins would be a good way to fight hunger.
