if I cant find a bottle or canteen, how do I craft a water bottle?

you cant do that.

You can fill water in Waterbottles, Canteens and Cookingpots.
None of them can be crafted. They can only be looted.

i only realized now that there are three containers... not including the jerry can

oh hell yeah!
Jerrycan can also be filled with water!
Barrels can also be filled with water, but you need a second container to pour water into them.
