Yes you can. Look in you library, under tools for DayZ Server. You can install it and run it on you LAN.
Search YouTube to learn how to set it up.
I dont talk about official and community servers though, but i guess dedicated servers running from your own computer also save it for next session, if you happen to turn off your computer.
it's great that the game has dedicated servers - it sth that seems to be fading away sadly looking at gaming industry these days...
