How do I know when I've drank/eaten enough?

Correct me if I am wronb, but.as I understood if icons (food/water) bottom right are grey, you are full.

There's no direct way to know when you are completely full. However, continuing to eat/drink past the icons being grey definitely adds to your "fullness" but there is a point when it stops. At what point that exactly is, nobody can know for sure. But i've noticed after eating about 2 cans of food and drinking a bottle of water with an already grey icon, my icon stayed grey/full the entire time I was sprinting from around Zelenagorsk towards Balota. So it definitely does help to eat even if it's grey, just don't overdo it.

Open up DayZDB map and find signs and then compare them to the DB map.
Or find a ingame map which are like those found in campsites on a billboard.

You always spawn at the coastline and thats how you first figure out where you are.
