As for vests the tactical has the most at 35 slots
Trousers top out at 30 slots I think with the BDU and Hunters.
It all comes down to weight and even map especially when it is always raining on Livonia and maybe you want to save that 1kg per item of clothing as that is another 3-5% of stamina if you want to end up with a plate carrier and still be able to hold your breath for a shot for more than a fraction of a second.
Yep for me the warm and weight are the critical factors, especially as I play a long game of survival and try to keep my character alive for weeks,
The good thing is there are enough variations of capacity, warmth, weight, and as you say Hotbar slots to cater for all. And whilst you can find the jacket, or pants you want you may not get the specific Hunter season, or tactical shirt colour you want so it gives you something to keep looting for whilst you explore or recon for players, etc.

It's not always perfectly up to date, but it gives you a good overview of everything in DayZ.
Then, if necessary, check for yourself if the information is correct or is still "out of date".
However, it greatly simplifies your search for information and there are few "wrong/old" things.
However, a tip "quick".
When you are just born, the best clothing is firefighter (black or brown), waterproof, great insulation, good additional slots ... but it weighs a lot. As soon as you are born you still have all the stamina, so the weight of the clothing does not affect anything and it makes you more comfortable to have warm and easy to find clothing (you are always born on the coast and no one wants that clothing).
The hunter's one is also not bad, but it's not really that common because so many are looking for it and you have to go inside to find it.
When you are already well equipped and "fed", then insulation and waterproofing will not be your priority. In that case, you should abandon the fireman's clothing and find military clothing, colder and wetter, but "healthy and well fed" is NOT a problem.
In this case, find your best combination on the site I linked to you.
I think, however, that the best combination is "Field, CCU or BDU Jacket" (Leather, if you can, but it weighs) + "Patrol Pants" (- H2O, but + cold) or "CCU pants" (+ warm but take + H2O) + definitely "Assault Vest" with "Utility Buttpack", little insulation but maximum load capacity.
All this, however, if you can give up running and "stable aim", because at full load you will only have the last 5% of stamina.
I'm used to playing like that, but it might not be good for everyone.
But if you are looking for maximum load, maximum isolation and minimum H2O absorption (which is not a problem when you are healthy and full), this is, in my opinion, the best way.
