How do I set up a LAN Server?
I noticed there's the "official" servers "community" servers and "LAN" but I don't see a way to set up the LAN server. Typically it's as easy as "host server" like in Arma 3 but I don't see that option here.

Look at steam tools, download DayZ server, start DayZ Server, start DayZ, choose lan game.

Before you start DayZ server... right click it - properties - set launch option -
In launch option you type: -config=serverDZ.cfg

It is worth to read the file with the editor or something like this.
serverDZ.cfg

There you can change basics like password etc.

I would also love more information about this.

e.g.

Do I need a separate PC to run the LAN server?

Do I need to purchase a separate copy of the game, or can I run the server at the same time?

I would just love to run a private server on my LAN so I can concentrate on PVE

No but good hardware is advantageous.

No separate copy needed, go browse the Tools section of the steam Library to find the server files.

ok. I made lan server on my pc and now a want invite my friends but I do not know how. Maybe hamachi?

Either that or you need to port forward it. Also remember this, DayZ servers are VERY demanding when the player numbers increase and the performance of your computer and the server may drop surprisingly fast if it's not beefy enough tl run the client and the server at the same time

Client? there is an option in the launcher. Server? Not possible atm, as far as i know
