That's all I know, so hope it helps.
However to be frank zombies aren't really a problem on their own and when you get a semi-automatic gun like SKS, .45 handgun etc. you can just gun them down with 1-2 shots, however of course shooting makes a lot of ♥♥♥♥♥♥♥ noise and noise will attract players as other players will most likely skin you alive for what you got on your person.
in another day I shooted a .45 bullet in a firefighter helmet thinking it would kill the guy, but he turned around and killed me with a shotgun.

If the values are correct it looks like the skate helmet, fire fighter helmet are good candidates with 0.8 protection value followed by the Enduro helmet. Iirc the higher the number the more it absorbs? Would make sense since the Welding Mask has a value of 0.
the way the amount of protection is measured is by using 0 - 1, but i dont agree with this because it is confusing to almost everybody. 0 meaning you will take no damage, and 1 meaning you will take full damage. For example 0.8 means you will receive 80% of the damage dealt to you, 1 means you will receive 100% of the damage, and the opposite when its 0. But as i already said information from that site is outdated and inconsistent. it still has some of the information that was back in the beta version of DayZ, which is why i asked the community to see what is the best item to wear, but i either got something that was off topic, or idiotic. I only got 2 legit answers which were from Wolf and X, but as X also said, the info from that site is screwy and we dont know for sure if the devs changed the values of certain items because most unofficial wikis arent maintained very well. DayZ needs its own official wiki that is kept up to date 24/7 so people know where to go to or look for.
Then i suggest you grab some files out of the game and look for the values. It's the only way to find out.
Also some things do make sense. Some helmets are just better absorbing certain damage than others. A ballistic helmet might stop a bullet but still leaves you with a big concussion.
And if you read how i got to my conclusion it should make sense. A welding mask doesn't protect you therefor a value of 0 but an enduro helmet which is made to protect from impacts to the ground of obstacles has a value of 0.8.
If you are not happy with my sensical approach and want exact numbers you have to do what i wrote in the first sentence. Nobody can help you there.
