Animal sellers - I can't access the purchases tab.

I gave strawberries to the vendors, Angela and Malcolm, thus increasing the hearts in the information tab, but now when I try to access the purchase option, they are no longer available. I imagined that giving gifts to the vendors would improve the relationship, but now I can no longer buy animals or hay in winter. Could you explain how this mechanism works? And how can I get the purchase tab back?

So gifting only has an effect once per day, are your hearts red or purple?
Are you talking to them whilst they are walking around their own ranches or whilst they are sat down?

I talk to them while they're sitting down on workdays.
Their hearts are purple; and since I kept giving them strawberries—thinking it was a good idea—I filled all 5 hearts. I only realized the difference between purple and red hearts because of your question; I also gave strawberries to the mayor and the architect and had no trouble talking to them afterward, so I gathered that Angela and Malcolm don't like strawberries, right? Now, regarding that... at this stage of the game (Early Access), is there any item they like that would turn the hearts red? Or should I wait a few days for the hearts to fade? Is there any item they detest that might make the hearts disappear immediately?

Ah yes the purple hearts are the bad hearts, they are indeed upset with you and have embargoed you from their stores.
Every NPC has likes and dislikes so you need to experiment a little with their gifts, some quite like plant based products, some animal products, and some like you to think outside of the box.
And remember to not spam them with gifts every day, the effect of boosting your relationship only works on the first gift of the day.

I managed to change the status to red hearts by giving plant-based gifts. Now I can access the shop again.

I believe the purple hearts were caused by slaughtering some animals on the NPCs' property.
