So, I never found a comprehensive resource on all the new equipment added into Definitive Edition and after datamining the demo, I thought I would make my own:

Appearance Changing Equipment

-This is probably what most people already know about Definitive Edition, I'll list these off pretty quickly:

It seems like perhaps you were originally meant to obtain Jasper's Sword after this sequence in the game: https://www.youtube.com/watch?v=QGXfDxbT8AE But maybe they changed it so that the sword would be unobtainable instead?

Interestingly, it's not the only Shadow Jasper fight that's coded into the game. There is actually a much harder version of Shadow Jasper Unbound as well.

In the Debug Console thread, the Enemy ID of Shadow Jasper is M722_E002_S01 (spawnable using the 'MonsterSpawn' command). But, there is also a separate Enemy ID for Shadow Jasper Unbound ("Jasper Unhinged"), which is M607_E002_S01, and it is a far more difficult fight. So it's possible that you were meant to gain access to the sword that way.

The Wolf Dragon Armor. Where can I find that. Hotto is not selling it. Is there a patch for it?

Wolf Dragon Armor: Purchase the Wolf Dragon Armor from the armour shop in Hotto after the events there in Act 2 of the game (after the events at Yggdrasil). (S Exclusive)

Best advice I can give is to make sure you've beaten Tatsunaga first. Check both the item and armor shop (it should be the armor shop, but make sure you're looking in the right place). Also, might depend on whether you are in Act 2 or Act 3.

If in Act 3, you must complete Miko's quest line: she only appears if you have unlocked the Sage's Trial

I believe you'll end up back there anyways before you can forge the Supreme Sword of Light. Assuming you're in Act 3 already, you'll just have to continue in the story.

Download this pak file[drive.google.com], place it into your game's "Paks" folder under "<steamapps>\DRAGON QUEST XI S\Game\Content\Paks" and run the game. You should find the Wolf Wear costume as part of the "Happy Adventurer Set" now when you go to "Misc -> System Settings -> Claim Special Rewards".

(Either that or use the Debug Console as described above)

Edit: I almost forgot about rinnegrid's mod[www.nexusmods.com] which adds every appearance-changing equipment (including Wolf Wear, I assume) to in-game armor shops <-- there's a third option for ya
