I don't think this is true, unless they changed it recently. Try it if you haven't already.
in the past when i did this fight in a normal playthru, i was much lower level and it was much more challenging.
the ring you are getting is essentially havels ring +3 from ds3, which was available in the very last area of the game, with players expected to be around SL120-150.
in ER, the challenge of getting "havels ring +3" is still a challenge that is balanced for finished, end game level characters, just like it was in ds3, the difference here is that they now allow the player to access this challenge MUCH earlier in the game. if youre crazy good at the game or want to bang your head against the wall for hours and hours to get the talisman at something like RL40 or RL60, thats great! players have that option. but the level of challenge around that talisman is end game level challenge, because youre getting an end game ring.
Or if you get lucky you'll get two summons that have nothing but a shield on them.
What is your build/stat distribution by the way?
For the record, my level when attempting this was 52.
You can't just run in there and mash attack, they have too much health for that.
Try playing defensively and watch what they are doing, these NPC types of enemies play pretty predictable most of the time. Parrying them also works really well if they use a weapon which is parriable.
EDIT: Just read your answer. Lvl 52 is pretty low, but it's definitely doable at that level.
Then you're just fighting the default builds and they're too strong for you at 52.
If I'm not mistaken the jar warriors are also buffed to the point of having a massive health pool.
Unlike certain other summons, which can be encountered in Deeproot Depths which really have not buff at all, as they easily just die to anything.
You heard wrong, the offline builds are the same at any level and will be easier when you're bigger. I'm not sure how the stats of the online builds are set up, they might also have a level set for health and damage scaling.
