First you need to actually active HDR in the game as well as windows. For me it didn't do that by default. I get washed out colors by turning HDR on in windows but leaving it off in game.
Crushed blacks for the most part stems from the following:
nVidia control panel->Output Dynamic Range "Full" but in TV-> Picture Mode Settings->Picture Options->Black Level "Low"
Or vice versa nVidia set to "Limited" but TV set to "High"
Correct would be "Full" and "High" or "Limited" and "Low".
Beware that depending on the scene and your own perception the wrong combination could look better for a while. Because it looks akin to a higher Contrast, which enriches colors. But that is not the case. Black detail is sometimes completely lost and in a colorful games colors could get overblown.
These are the best settings to use:
In game:
HDR: On
Brightness: 2
Luminance: 40
On the TV:
Black level Low
HDR Game mode
Dynamic tone mapping: HGIG
Oled Light 100
Contrast 100
Sharpness 0
Color 50
Tint 0
Aspect Ratio 16:9, Just Scan On
Dynamic contrast Off
Super Resolution Off
Color Gamut Auto
White Balance Warm 2
Turn on HDR in the Windows 10 settings menu.
Nvidia control panel: 4:2:2, 12 bit, Limited.
If any issues arise with weird colors or macroblocking: Reset tv to initial settings then apply these settings again.
The game will be dark during certain times especially the beginning because it's cloudy and raining. It'll look different about 10 minutes in when it stops.
No issues running on the same TV and the same GPU.

That said, I see that you suggest 12 bit in 4:2:2 and my understanding was that as long as GPUs do not support HDMI 2.1, then sending the signal in 12bits would create a mismatch with the tv settings and mess everything up?

Switch from RGB 8bpc to YCBCR 4.2.2 10bpc when you do HDR. 8bpc isn't enough.
You need 8-bit RGB w/ Dithering until HDMI 2.1 GPUs ship.

It works with 4K 12Bit and 60Hz as well. Only 1440p for some reason only goes 8Bit no matter 120Hz or 30Hz.
No chroma subsampling.
Using Nvidia colour settings. RGB. Full. 8 bpc.
TV must have black levels set to high at RGB full.
It looks spectacular.
