Cordova must have grabbed the Holocron (or the information on it) before Order 66, since he saw the event happening in his vision. If he was in Coruscant during Order 66 he would have probably never made it out alive.
Luke and Leia were born after Order 66 had already started, and thus it doesn’t seem likely that their names would be on the list.
One of the developers (don’t remember who) also specified that a Holcron only has information stored that someone puts in it, so it doesn’t automatically either.
The destruction of the Holocron may yield some bad news for Cal's future.
So, assuming this list was made before the purge, there is no way the maker of the holocron could have known about the existence of Luke and Leia as they weren't born until the purge had officially begun.
