Methods depend on government type but in general:
Legally
1) have a claim on the title and have at least Trible Authority 3 or Realm Authority 2 (for Fuedal, Clan, etc), then click revoke title in the character drop down. They may still refuse and make you fight them for it (which after you win, you do the same thing while they are in prison)
2) they have committed a crime, which allows you to revoke title, then do 1.
3) they have committed a crime that lets you imprison and your attempt fails, they revolt, you win and do 1.

Illegally
1) as long as you have enough authority, you can just try to revoke. Either they accept or they fight and you revoke after the fight. Be aware this method can trigger all your vassals fighting you if they don't like you.
2) if you are set to inherit the tile, you can just murder scheme the dude

The biggest limitation to taking titles is having the right realm authority level.

Oh and last method, get the divine intervention mod and use it to cheat take the title...
Wouldn't personally recommend, but its an option.

I personally do what aswitz suggested, but just for completeness:
You can also give independance to the corresponding vassal, and then do anything you would normally do to get the title that is not in your realm. Note that this leads to a truce, which you can end by assassinating them before invading them. I never do this, and would only ever consider it if you are far from getting the necessary authority, but that's an option.

okay thank you !! i ll try it soon, i think the main problem i had was 'tyranic action' so i did not dare claim the title of my vassal. i ll try what you said in some hours, thank you again !

I wouldn't worry about that (tyranny) too much. It's just a negative opinion modifier, which'll reduce over time. It's only really an issue if you take a lot of tyrannical actions and the modifier gets really quite large, although, even then, there are ways to mitigate very large negatives with equally large positives once you really know what you're doing.

The potential of a massive rebellion, which aswitz referenced, is the thing you should really worry about if their acceptance isn't 100% and you've got a lot of other unhappy vassals or the vassal you're revoking from is in a large faction.
The only risk with managed use of Tyranny is that after a Succession, you can go from a balanced realm where a few people completely hate you but other people completely love you and some more are just locked in alliances, to a situation where 'Opinion of Predecessor' forces a realm where everyone either kinda likes you or kinda hates you. But that can happen anyway, planning to start each new character with a quick civil war is probably best.
One more thing about Revocation:
Once you've clicked the 'Revoke' tab, but before you actually do, click the 'On Decline' tab.
Some of your vassals will be more popular w/each other than others, & there may be one who everyone likes. Revoking his Title will cause all your other vassals to join his Rebellion, making it much easier to Take all their land in one fell swoop.
Others may back each other. If you have 6 vassals you may only need to incur 1-2 Tyranny hits to get them all to become rebels/criminals. On Decline will make things simple so check it w/all your vassals beforehand-it might make things difficult, too, depending on whether or not you can defeat all your vassals at once.
