The one that's given me the best results has actually been Aspect of Poseidon sword though, those casting builds are ridiculous.
Single target? Looking for those +damage% boons and big crit numbers? The attack's got you covered even without hammers.
Large groups? Do you like rapid-fire boons like Zeus' lightning or status-stacking hangover or chill? Look no further than the special. The +4 special shots hammer is obviously nice for these builds, but they can still work without it.
And both of these builds are not only viable, but complementary. You don't have to choose between them, can build for both in the same run, and have tools to wreak havoc in any circumstance.
Frankly I don't know why everyone's so hyped about the Aspect of Chiron in comparison. Sure in theory it can put more special shots into a single target, but having to refresh the lock-on with an attack every 2-3 specials really slows it down in my experience.

2: Gun
3: Shield
4: Spear
5: Sword
6: Bow
I have 13 hours, idfk what aspects there are and whateverthingies, so far this has worked out best for me :D I have gotten the furthest with the Fists and the Gun and i enjoy them the most. The fist's basic attacks are awesome, the gun's Q i LOVE with the triple barrage addition.
Chaos shield works really well too, Doom's a classic but I recently had fun putting bolts on the special too.
Chiron bow was an early favorite of mine but recent runs made me appreciate Rama more, as explained above. Its special is really strong with Dio or Zeus. It's my next aspect to max out.
I love the fists with any aspect. I had my fastest clear so far going all in on dash strike boons/hammers/chaos upgrades.
Eris rail gave me my first 32 heat clear out of nowhere, it's crazy how strong that thing is when you start out with lightning. From there on out you can just wing it and see what the boons/hammers bring, but if you can juice up your special to go along with the sparks, it's mayhem.
Spear hasn't clicked with me so far. I wish I had more blood so I could give aspects 2 & 3 more time. Guan Yu definitely ain't it for me tho, don't like how it plays.
I'm almost at run 70, accomplished all but only a couple prophecies, and still finding new combinations. Just a few runs ago I found my new favorite: Poseidon's pushback for your basic attack, rupture dot for pushback, the duo boon where lightning strikes when an enemy is pushed back, and jolted debuff with lightning. Let's you spam your attack, giving you the double debuff damage boost, and sinking a whole lot of damage without every stopping your attack. And if you get boosts for slamming enemies into the wall, oh boy!
But i still remember my first Arthur Sword run when i was critting for ~1.5k from behind
Aspects are randomly most of the time, depends of what i want to try out.
Also the Shield is last place because i still don't know how to effectively use it
2) Varatha (spear), aspect of Hades — Punishing; like father, like son! Aspect of Achilles is pretty good too. Aspect of Guan Yu is hard to work with due to the reduced health and change on the spin attack.
3) Stygius (sword), aspect of Arthur — I once had a surprisingly fast run with this one! I love it for its max health increase and epic move set. The other non-default aspects are nice too.
4) Coronacht (bow), aspect of Rama — while I could do reasonably well with any aspect of this weapon, Rama has some cool perks to it, especially combined with the Daedalus Hammer upgrades.
5) Malphon (twin fists), hidden aspect — wouldn't consider anything else, really.
Exagryph is my least favorite — for me it is slow, and... guns are well overrated anyways :P
