The only thing they can really do in the winter at the herbalist building is craft potions or make poisoned projectiles since they can't gather any plants.
At every season change you have to go into the management interface for the herbalist huts and adjust things because some plants become unavailable or available depending on the season. Hopefully they improve this system in the future, it's not fun to have to constantly tweak these settings.
I just set them up to get (I think) 5% on all the herbs and the three mushroom needed for soup. Uniquely the herb building does NOT pop up the anvil thing when out of season. If I need loads of herbs for sale or potions I just add another herbalist. I then just let them be. Also my farmers just sweep up in winter.
Make it a long winter next time. Set seasons to 30 and only click when you're ready. She can easily get several 10 skills and return to the core job come Spring. Might make a good wifeable person with all those 10s...?
I have one extra of each building Type to put people through cross training. On a cheap quick item they can harvest or build like 100 per day for max XP. Takes 2 days to get to 10. When their kids mature they'll have a lot of 10s already.
Now, do this for your intended spouse. Put them through ALL the different skill trades to get to 10. Then your heir will start off at or near maxxed skills. If you time it all right and level yourself up too... #Challenge
