How can I level up enough to beat Shadow Yukiko

I'm only level 9 and I keep dying. How can I level up enough without fighting or should I keep fighting?,

you can ONLY level up by fighting.
You could redo all floors or you could try to beat up some golden hands.
I recommend grinding up until you can fuse Oberon. It should be a breeze with that guy. Just repeat the level below her boss fight.

You have to fight the shadows on the dungeons so you can Level up your characters. I recommend going to fight Shadow Yukiko on Level 15/16.

Use Bufu to explore her weakness

You could also buy ball lightning from the shop and kill golden hands. They give crazy xp and gold and you need 3 ball lightning per kill.

Just go between floors, even if you die (kinda hard to do), it's inconsequential.

level a slime to level 7 so it learns both resist physical and red wall.

fuse that slime in a recipe to create either senri or oboron. pass on resist physical and red wall. level them until they get media (optional but helps)

cast red wall on chie to remove her fire weakness and keep SY down with either bufu or ice cubes. when the price spawns, focus it down until it runs off.

Each persona has different status. The more you use with the same persona, the higher status which can be added by cards.
And, the higher your level, the higher level persona can be combined.

you should ALWAYS fight shadows enroute to the early dungeon bosses.

Most, if not all shadows have weaknesses - just keep spamming /different/ elements until one works.

Fuse your personas.
