It's pretty easy to play P1 and P2 in... not so legal ways, if you know what I mean, considering how damn expensive these games are today.
But I would recommend playing the PSP Remasters over the Ps1 originals, as they are less expensive, and they removed the stupid P1 American changes. The only downside is that they never released the second part of P2 outside of Japan, so you'll be forced to use the "indirect" path to play the game in English.
P1 aged badly, but P2 is still a great game today.
The second main question is what else they might feel they need to do. As others have pointed out, P3P had no anime cutscenes which means none with the feMC in them. There's also the facts the Golden had a graphical update which P3P didn't. They might not be keen on releasing a game with such outdated graphics.
Ultimately it might come down to someone deciding whether porting it will be profitable enough.

By the time they get around to it, most of their customers will have already finished the game so they'll just say it's not worth it anymore and move on. And the vicious cycle continues. Sure would be great if they did polish it up and learn from their mistakes.
