Also.....is there any big difference which character you date or is this nor rly important and just a "waifu" thing

you can date them al at the same timel if you want.

So there is a harem end like in P5?
Also, can you date even the female main character or is she not avaible when you play as Yu?

No there isn't a harem ending. Trying to date multiple girls tends to end very badly.
